Hot Asiago Spread

Ingredients:
1 cup nonfat cottage cheese
1/4 cup nonfat cream cheese -- plus
2 tablespoon nonfat cream cheese
1 1/2 teaspoon Dijon mustard
1/4 cup grated Asiago or Parmesan cheese
2 scallions -- sliced
1 jalapeno pepper -- seeded, deveined,
and minced (wear gloves to prevent
irritation)

Instructions:
In a blender or food processor, puree the cottage and cream cheeses; add the mustard. Add the Asiago cheese, scallions and jalapeno; pulse to combine.

Transfer the mixture to a 2-cup microwavable dish; microwave on High until heated through, 3 minutes.

Serve at once.
