4 cups mashed potatoes
3/4 cup parmesan cheese
kosher salt -- to taste
black pepper -- to taste
Preheat oven to 375
Spread the mashed potatoes in a 1-qt gratin dish, sprayed with cooking spray. Cover the potatoes with plastic wrap and press down so that potatoes are even.
Remove plastic wrap, salt and pepper to taste and sprinkle with parmesan.
Bake until top is golden and crispy, about 20-30 minutes.
