Open-Face Reuben Sandwich

Serves: 1

Ingredients:
2 slices reduced-calorie rye bread — toasted
1 teaspoon Dijon mustard
1 thin deli ham slice — halved
3 tablespoons shredded Gruyere cheese
2 tablespoons drained rinsed sauerkraut

Instructions:
Preheat the broiler.

Spread the toast with the mustard; top each slice evenly with the ham and cheese. Place on a broiler rack and broil 5 inches from the heat, until the cheese is melted, about 1 minute.

Meanwhile, place the sauerkraut in a small microwavable dish; microwave, covered, on High until heated through, about 30 seconds. Top each sandwich with the sauerkraut.
