Sausage and Peppers

Serves: 4

Ingredients:
1/4 pound turkey sausage — cut into 1/4″ slices
1 red bell pepper — seeded and sliced
1 green bell pepper — seeded and sliced
1 yellow bell pepper — seeded and sliced
1 onion — sliced
1/4 cup chicken broth
3 cloves garlic — minced
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano

Instructions:
Spray a large nonstick skillet with nonstick cooking spray; heat. Cook the sausage, stirring frequently, until no longer pink, 4-6 minutes. Add the bell peppers, onion, borth, garlic, pepper flakes and oregano; cook, stirring frequently, until most of the liquid evaporates, about 5 minutes. Reduce the heat and simmer, covered, until the peppers are tender, 3-4 minutes.
