1/2 whole French bread loaf — sliced diagonally, 1/4″ thick
4 whole tomatoes — diced
3 tablespoons fresh basil — chopped
2 teaspoons olive oil
3 ounces mozzarella cheese — (fresh) diced
1 clove fresh garlic (finely chopped)
Slice and toast french bread under broiler, set aside.
Mix together tomatoes, basil, garlic, and olive oil. Add salt & pepper to taste.
Spread tomato mixture evenly on bread slices.
Top each bread with equal amounts of mozzarella cheese.
