Spinach and Cheese Quiche

Serves: 12

Ingredients:
12 ounces evaporated skim milk
1/3 cup cottage cheese, lowfat
1/4 cup grated parmesan cheese
2 eggs
3 egg whites
1/2 teaspoon salt
1/4 teaspoon black pepper
10 ounces frozen spinach — thawed and squeezed dry
1 pie crust

Instructions:
Preheat the oven to 425° F. In a medium bowl, whisk the milk, cottage cheese, Parmesan, eggs, egg whites, salt and pepper.

Place the pie plate on a jelly-roll pan; spread the spinach over the pie crust, then pour the filling over the spinach. Bake 15 minutes; reduce the oven temperature to 350° F and bake until the filling is set, 20 minutes longer. Let cool 10 minutes before serving.
