Ingredients:
1 package spice Cake Mix
15 ounces pumpkin puree
1/2 cup egg substitute
1 1/2 tablespoons pumpkin pie spice
3/4 cup raisin
Instructions:
Preheat oven to 350 degrees
Spray 24 muffin pans with non-stick cooking spray
Combine all ingredients with electric mixer
Fold in raisins
Place a scant 1/3 cup of cake batter into each muffin well
Bake for 20-22 minutes
Cool on wire rack
