16 ounces fettucine — or fresh Tagliatelle
4 ounces cherry tomatoes — halved
1/2 whole cucumber
2/3 cup plain low fat yogurt
1 clove garlic — crushed
3 tablespoons fresh herbs — thyme, parsley, chives
salt and pepper
Prepare pasta according to package instructions. Drain, rinse under cold water, and drain again.
In a small bowl, combine yogurt, herbs, garlic, and salt and pepper.
Cut cucumber lengthwise and scoop out the seeds. Slice cucumbers into paper-thin slices.
In a large bowl, combine cucumbers, tomatoes, pasta, and yogurt dressing.
