Ingredients:
1/4 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 large spanish onion — cut into 1/4″ slices
3 egg whites — lightly beaten
3/4 cup bread crumbs
Instructions:
Preheat the oven to 400° F; spray a nonstick baking sheet with nonstick cooking spray. On a sheet of wax paper, combine the flour, salt, and cayenne.
Separate the onion slices into rings, but keep them in groups of two, one ring inside of another. Dredge the rings in the seasoned flour, then dip in the egg whites and then coat in the bread crumbs; place on the baking sheet. Bake on the top oven rack until browned, about 10 minutes. Turn the onion rings over and bake until browned, 5-10 minutes.
