Roasted Broccoli – My Favorite

I don’t know when or how it started, but once I started roasting my broccoli – wow. I can’t have it any other way! We’ve been buying broccoli crowns lately because they’ve been on sale at my local supermarkets. I cut them up, spread it out on a baking sheet, and either do 1-2 tsp of olive oil if we have the points or spray with my Misto if we need to lighten it up. I then sprinkle the broccoli with Maldon salt and crushed red pepper flakes and toss it all together. I bake it at 350 for 30 mins or so, until tender. The bottoms get caramelized and the tops get crunchy – sooooo good.

Roasting veggies like this has been a great way to incorporate them into our dinners and give them more “oomph”!
